  17. <p>     THANKS, BUT WE'LL HAVE THE CHOCOLATE CHIP FUDGE SWIRL. The
  18. U.S. Department of Agriculture has announced the development of
  19. Oatrim, an oat-bran extract that can serve as a fat substitute
  20. in desserts and other foods. This dismayed Murtaugh/Match, a
  21. small Wisconsin food-consulting firm that claims to hold the
  22. patent on oat bran-based frozen desserts. Explains Timothy
  23. Murtaugh: "We take advantage of the creamy, smooth texture of
  24. oats once they are cooked, like oatmeal." Says a USDA patent
  25. adviser: "We feel there's an opportunity for both to be allowed
  26. and licensed within their own commercial niches."
